Quick and Easy Meatball Subs For Dinner

Are you ready for a quick and easy dinner that’s easy on your budget and time? Forget those $5.00 footlongs from Subway! Make your own and depending on the size of your family, you may have leftovers for lunch. You win either way because you get to control the ingredients and it takes next to no time to prepare.

Here are the ingredients that you’ll need:

  • 1 1/2 pounds of ground beef(80% lean)(you could also use ground turkey)
  • 1 cup of bread crumbs
  • 1/4 cup of milk( I used soy milk)
  • salt and pepper to taste
  • 1 large egg( I used egg beaters)
  • 1 jar of marinara sauce(24oz)
  • 1 package of hoagie rolls(or rolls of your choice)

Combine the first five ingredients gently with a fork and form meatballs each equal to 2 level tablespoons. Use a large pot to bring the marinara sauce to a boil and then gently drop in the meatballs one by one and cook them  for about 30 minutes. I test a couple of the meatballs to make sure they are done.

Allow the sauce to cool a bit before serving.

In the event that you don’t feel like cooking all of the meatballs, they make a perfect candidate for freezing and use later to make more subs or even spaghetti and, you guessed it, meatballs.
