Caprese Sandwiches(meat optional)

It was one of those, what do we make for dinner nights. Chicken, nah. Burgers, nope, that’s for later in the week. Caprese sandwiches, ahem…okay?!!! I have long admired this sandwich through the cold case at my favorite coffee shop but now it was time to try making them myself. Here what you need to make these delicious sandwiches and don’t even think about using anything except olive oil to brush the bread.

  • Ciabatta rolls
  • Olive oil
  • Thinly sliced turkey or chicken or roast beef
  • Thinly sliced mozzarella cheese
  • Sliced tomato
  • Fresh basil leaves

Heat your grill pan, split the Ciabatta rolls, brush them with olive oil and place them soft side down and grill for about 5 minutes. Flip over both buns then start layering the bottom bun with cheese, tomato, meat(optional) and grill for another five minutes or so. Remove from pan, add basil leaves and top-half of bun.
