I know, I know I was supposed to clean around the edges of my dish before snapping this picture…at any rate you can probably whip up this potato salad with ingredients you already have.
- 5-6 small red potatoes
- 1 tablespoon of spicy brown mustard
- 1 tablespoon of red wine vinegar
- 2 tablespoons of olive oil
- 1/2 cup of fresh chopped parsley
Cut potatoes in half and boil for about 20 minutes or until tender.
Allow potatoes to cool slightly and toss in spicy brown mustard, red wine vinegar and olive oil ; stir gently.
Add chopped parsley, stirring just until blended
