Chicken Fried Rice Mashup

I should disclose that this was supposed to be stir fry with rice on the side but it turned out this way…more of a fried rice dish.

  • The first thing I did was make a few servings of brown rice in my rice cooker.

I culled most of my recipe from this one at the Food Network and since I was fresh off of a Produce Box delivery I cut up cabbage and bell peppers to make up for not having the amount of broccoli listed in the recipe.

The recipe offers a great tip, marinate the chicken while you cut up the other ingredients. You don’t have to use a wok, you can use a non-stick skillet but you’ll need to get the heat up really high so you can get a nice brown on the chicken. Once you’ve cooked everything, you’ll need to briefly warm up the veggies that you cooked earlier and this is where I made the departure and combined it all into one dish.
