I found this recipe in one of my issues of Family Circle and I must say it was delicious. I’d never tried rice stick noodles before but I was not disappointed. I made one substitution, the recipe called for sugar snap peas, I opted to use green beans instead.
12 oz rice stick noodles
2 scallions, trimmed and sliced
1 tbsp toasted sesame oil Toasted sesame seeds
2 boneless, skinless chicken breast cutlets(about 3/4 lb)
Okay, I will admit that one day while out running errands, I dropped into Chipolte and dropped 7 dollars on their chicken salad. Don’t get me wrong, it was very tasty but a bit pricey and you don’t even get free guacamole(say what!!). So you know that got my wheels to spinning on how I could do this at home on the cheap.
Cooked Chicken Breast(season how you like and clip with kitchen shears)
Canned beans either Kidney or Pinto(these are my favorites but you could use your favorite, rinse them!!!)
Brown or Jasmine Rice(again these are my favorites)
Salad Greens or chopped romaine
Salad dressing of your choice(may I suggest an Asian Sesame)
Now you’ll want to do some assembling and really there is no right or wrong way to put this salad together.
This is my first try at making granola and it turned out pretty good.
Find the Recipe at the Homemade Food Junkie. I found almost all of the ingredients at Aldi for a fraction of the cost that I would have probably paid elsewhere. The HFJ uses cherries, I opted for cranberries instead.
